Pumpkin Powerballs

These sugar-free, gluten-free, dairy-free, no-bake balls are packed with flavor and make a crave-worthy, guilt-free treat morning, noon or night!

Ingredients:

1 8oz Can Puréed Unsweetened Pumpkin

1/2 Cup Coconut Flour

1/2 Cup Unsweetened Sunflower Butter

1 tsp Vanilla Powder

1 tsp cinnamon

1 tsp nutmeg

1 tsp ground ginger

1/4 tsp salt

Xylitol or Stevia to taste, if needed

1/2 Cup Unsweetened Ground Coconut Flakes


Directions:

1. Combine first nine ingredients in a bowl and mix until combined and smooth. If batter is too sticky, add more coconut flour until dough forms. Place 1/2 Cup Unsweetened Ground Coconut Flakes on a separate plate.

2. Form into 1 inch round balls. Roll in unseated coconut flakes to cover.

3. Place in Freezer-Safe container and freeze for at least 30 minutes prior to serving to achieve desired firmness. Enjoy!
